 Post subject: water temp readings all over the place and revs staying high

Hi all, I have a 2001 Mondeo 2 litre petrol estate , the reading on the water temp gauge has started going all over the place i.e. taking about 10 miles to show any reading at all then going to normal then down to a low reading then back again, at the same time it seems to be fooling the engine into thinking it's cold and keeping the revs up to about 1200 on idle. The local main dealer had the car in and thought it was a temp sensor which they replaced but to no effect any ideas before I take it back in next week would be great
